We're processing the grapes for the 2019 Stressed Vines Pinot Noir from the Hills of Annapolis, CA this morning at @punchdown_cellars . The fruit came in exceptionally clean so sorting was a total breeze. After de-stemming and sorting, all the fruit was placed into a bin with dry ice for a three to four day cold soak. Then we had to run a sample up to ETS Labs for the initial chem panel.
